TOFU MEATBALLS
Press tofu between paper towels to remove moisture. Press the tofu with a fork 'til it's uniformly smashed. Add remaining ingredients, mix well and form into 1" balls.
The tofuballs can be fried in 1/4" oil until golden brown. Add to spaghetti sauce and serve over spaghetti sprinkled with parmesan.
Lower fat version:
Place tofuballs in an oiled baking pan. Do not crowd in pan. Add tomato sauce and bake for 30 min. at 350 degrees.
Serve over spaghetti.
