HAM  & CHEESE PHYLLO

 4 egg yolks
2 c. ricotta cheese
1/2# prosciutto, or smoked ham, finely chopped
1/2 c. grated parmesan
1 T. rosemary
salt and pepper, to taste
1# phyllo
1 c. butter, melted

  Beat egg yolks into ricotta.  Stir in remaining ingredients and season to taste.
  Cut phyllo sheets into quarters and stack.  Butter top sheet, put 1 T. filling bout 1" from the top.  Fold a corner across the filling and continue to fold, as if folding a flag, 'til the strip is all folded; filling will expand as it cooks so do not wrap it too tightly.  Place on a buttered sheet  Brush the top with butter.  Continue.  Bake in 350 oven for about 25 min.  Serve immediately.     
  Can be refrigerated up to 24 hours before baking.  Can be frozen.  Do not thaw.  Place frozen on buttered baking sheet.  Bake at 350 for 45 min. or 'til well browned.  Serve immediately.
