BRAN MUFFINS

 

In large bowl mix bran with water, oil, sweetener, buttermilk and raisins.

Set aside til cool, then add eggs.

In separate bowl , stir together bkg. soda, salt & flour 'til thoroughly blended; then stir into bran mix. Do not overbeat. Just mix 'til blended.

Spoon batter into greased muffin cups 'til 2/3 full. Bake @ 425 degrees for 20 min. or 'til tops spring back when lightly touched.

Makes 2 - 1/2 dozen. (Can store batter in fridge in tightly sealed container up to 2 weeks.)
